Vegan Matcha Waffles
Ingredients:
- 1 1/2 cups all-purpose flour (or gluten-free flour blend)
- 1 tablespoon matcha green tea powder
- 2 tablespoons sugar (or maple syrup)
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1 1/4 cups unsweetened almond milk (or any plant-based milk)
- 1 teaspoon vanilla extract
- 1/4 cup coconut oil, melted (or vegetable oil)
- 1 tablespoon ground flaxseed mixed with 3 tablespoons water (flax egg)
Instructions:
1. Prepare Flax or Chia seed Egg:
- In a small bowl, combine 1 tablespoon of ground flaxseed(or chia seeds) with 3 tablespoons of water. Stir well and let sit for about 5 minutes until it thickens.
2. Mix Dry Ingredients:
- In a large mixing bowl, whisk together the flour, matcha powder, sugar, baking powder, and salt.
3. Combine Wet Ingredients:
- In another bowl, mix the almond milk, vanilla extract, and melted coconut oil. Add the flax egg and stir to combine.
4. Combine Wet and Dry Ingredients:
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; some lumps are okay.
5. Preheat Waffle Iron:
- Preheat your waffle iron according to the manufacturer’s instructions. Lightly grease it with oil or non-stick spray.
6. Cook the Waffles:
